Chocolate Raspberry Chia Pudding

I love chia pudding, and it is so healthy for us. Chia seeds come from a flowering plant belonging to the mint family, called Salvia hispanica. They are naturally rich in omega-3, antioxidants, fiber, protein, calcium, magnesium, and iron. Chia is native to central and southern Mexico and Guatamala, and was cultivated by the ancient Aztecs and Mayans. Chia has become quite popular recently due to its health benefits and can be found at most grocery stores.

There are many chia pudding variations, and I enjoy it for breakfast or a snack. When I need a chocolate fix, I make the pudding with chocolate milk and raspberries. Basically, I add whatever sounds good. For awhile, I was eating chia seeds, vanilla almond milk, cut up apples and grapes, with cinnamon sprinkled on top. Yum!

Chocolate Raspberry Chia Pudding
Makes 1-2 Servings

1/3 cup chia seeds
1/2 cup or more depending on your preference of SO Delicious Soy & Dairy Free Coconut Milk Organic Raspberries
Sprinkle with coconut flakes
